Foodie Friday: Tofu Noodle Soup
Welcome to Foodie Friday! I made this up myself because my daughter won’t eat any meats or chickens. She will, however, eat tofu.

Tofu Noodle Soup
Ingredients:
1 can of low sodium chicken broth
1/2 a container of super-soft silken tofu
handful of carrots
handful of celery
handful of egg noodles
Instructions:
cut the celery and carrots into bite size pieces appropriate for your child
cut the tofu up into medium-sized cubes
put all ingredients into a small saucepan and bring to a boil
boil until noodles are cooked and carrots are the appropriate consistency for your child to eat them (for my daughter we have to get the carrots very soft so this can take about 45 minutes to 1 hour)
I place all of the items on a plate and she eats them with her fingers.
