Holly: Healthy Eating
We may have had a little breakthrough with Brett’s eating Sunday. Well, that may be a bit premature, but Brett ate really well that day. We took a page from the Feeding Little Foodies site with part of our menu.
For breakfast she ate oatmeal and bananas. She didn’t eat great but I think it is because she woke up at 4:15am and we gave her a bottle.
For lunch I gave her a sunflower seed butter sandwich on whole wheat bread. I realized that the jam I had was expired so she just had the bread with sunflower seed butter. She LOVED it. I made one for myself (with honey) and it was tasty. The consistency is just like peanut butter but it tastes just like sunflower seeds. She also had diced pears. I had also made myself artichokes for lunch and she also loved the fresh artichoke heart with a bit of butter. I was so pleased!
For snack she had string cheese and a strawberry (the first time she actually ate one).
Dinner came and my brother made creamy chicken casserole. It was delicious! I’m sure that the Campbell’s soup that is used isn’t the healthiest but the rice, chicken and green beans are delicious and nutritious and she ate it up!
Sunday could have been an anomaly but it also could have been a new variety of foods that Brett just hadn’t been exposed to that often. I am going to keep trying to be creative and see if this makes her a better eater. I will say that I already feel that I spend a great deal of time in the kitchen but if I can get my daughter to eat delicious and healthy food then it is worth it!
Monday Update: Another great eating day! Started with Brett eating an entire egg for breakfast along with blueberries and some sausage. Lunch was turkey, avocado and sweet potato rounds (she ate an entire sweet potato!). For dinner she ate the leftovers from last nights dinner. She also had three six-ounce bottles! Growth spurt or a great new appetite for new things? Either way, I’ll take it!
